Quick vegan bean curry

You don't have much time for cooking, and at the same time you want something delicious, filling and oriental? Try this recipe for a quick Indian bean curry. Beans are rich in phosphorus, potassium and calcium. It is also a great source of protein.

Ingredients for vegan bean curry:

  • 2 cans of black or red beans (or in a healthier version a glass of dry black or red beans soaked overnight and cooked in water)
  • 2 small onions (preferably red ones)
  • 2 garlic cloves
  • 2 tomatoes
  • a handful of fresh cilantro
  • 2 tbsp oil
  • spices: 2 tablespoons of garam masala, 1/2 teaspoon of chilli, salt to taste

  • Serve with rice, Indian chapati bread or baked potatoes

Preparation:

  1. Peel the onion and garlic. Cut the onion into thin slices. Chop the garlic.
  2. Wash and cut tomatoes into small cubes.
  3. Fry the onion in oil, add garlic at the end. Add garam masala and chillies. Fry one more minute.
  4. Add tomatoes, beans, salt and 1/3 cup of water to the pan/wok with onions. Cook for 15 minutes.
  5. Chop the cilantro. Add it to the wok 5 minutes before the end of cooking.
  6. Serve with rice, Indian chapati bread or baked potatoes
